Simple Balance Cooking & Shopping II
If you’ve followed any of this series, you know that this isn’t one of my bigger categories. It’s not that I have nothing to share on shopping or cooking but it’s harder for me to put into posts for some reason. But I’ve found lately that I’m kicking myself for not jotting down my recipe “creations” that worked out well as I can’t duplicate them….LOL My memory isn’t THAT good! LOL And yet, this is probably the most consistent form of cooking I do. So I decided that this tip is mostly for me…if I put a few of my creations here, I can duplicate them in the future!
So a few weeks ago, I was reading a book on marriage and feeling pretty guilty that I’m so bad about getting dinner ready before my hubby gets home. I looked down at my watch to see it was 4 p.m. I decided to go in and put something in the crockpot style cooker. I came in and looked through the pantry, freezer and fridge. Here’s what I came up with:
Creamy Asparagus Chicken
Half dozen frozen chicken breast tenderloins (lightly thawed)
1 can cream of mushroom soup
3/4 C sun dried tomato alfredo sauce
1/2 C sour cream
1 small bundle of fresh asparagus cut in 1″ strips
I threw it all in the cooker, added some salt, pepper and a little butter and let it cook on high for just about an hour. I mashed some potatoes to serve with it and I was the family goddess for the night. Everyone raved about it and I was just overjoyed that I got dinner on the table and still enjoyed reading my book until my hubby got home. It was definitely a win, win.
It’s my procrastination that kills me with cooking - when I get off my duff and get something going life is so much better! ;o) Now if I could just remember how I made that killer corn salsa……*sigh*

That was what really made the dish - it gave it such a rich and deep flavor! ;o)
